I’m a BIG sucker for falafel. I love those spicy, crunchy little patties… Especially with a good dot of garlic sauce!
Here in Belgium, we eat falafel as an alternative for kebabs or durums but I haven’t got a clue if this is the case in other countries too…
Today was the first time I made my own falafel, exciting! I chose a recipe for baked falafel to keep it healthy (normally falafel is fried) and to stay in that line, I also made a garlic sauce based on yoghurt instead of mayonaise. I served the falafel in wraps, with some iceberg lettuce, cucumber and chopped up onions.
It’s pretty easy, you just blend all the ingredients together in a kitchen robot (or in a bowl with a mixer, as the poor girl I am, haha).
The ingredients aren’t too exotic either… You can find ground coriander and cumin in practically any Turkish or Moroccan store, we have a lot of those here in Ghent. But I guess you’ll also find them in the bigger supermarkets.
Falafel
Ingredients (for 2 people)
Patties
- 1 can (400g) chickpeas, drained
- 3 Tbsp flour
- 3 Tbsp fresh parsley, chopped
- 2 garlic cloves, finely chopped
- 3 tsp ground cumin
- 3 tsp ground coriander
- 1 tsp cayenne pepper
- pepper and salt to taste
- olive oil (for brushing)
Sauce
- 125g plain yoghurt
- 1/2 Tbsp mayonaise
- 1 garlic clove (or more), finely chopped
- 2 Tbsp fresh parsley, chopped
Extra
- 4 wheat tortillas
- some iceberg lettuce, cut into strips
- 1/3 cucumber, sliced
- 1/2 onion, chopped
Directions
- Preheat the oven to 200°C
- Combine all the ingredients in a kitchen robot and pulse until blended, or put the ingredients in a bowl and blend with a mixer.
- Taste the falafel mixture, and adjust the seasoning to your liking.
- Shape into 8 equal sized patties.
- Place the patties on a greased baking sheet (I use a teflon baking sheet liner) and brush each with some olive oil.
- Bake for 25 minutes, or until browned and crispy on the outside.
- Meanwhile, make the yoghurt-garlic sauce: just combine all the ingredients in a small bowl and stir well. Put aside in the fridge.
- When the patties are ready, heat the tortillas in the microwave (30 sec) or in a pan. This way they’ll be easier to handle.
- Fill the tortillas (in a rectangular shape along the bottom 1/3 of the tortilla) with 2 patties, some iceberg lettuce, cucumber slices and chopped up onion. Then drizzle the yoghurt-garlic sauce over the filling.
